Ingredients
  

Protein
  • 1 pound ground beef preferably lean
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Seasonings
  • 2 tablespoons olive oil for cooking
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon red pepper flakes optional

Method
 

Prepare the Ingredients
  1. Slice the bell pepper and zucchini, halve the cherry tomatoes, and mince the garlic.
  2. Wash and dry the spinach.
Cook the Beef
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
Add Vegetables
  1. Add the minced garlic, bell pepper, and zucchini to the skillet. Cook for another 5 minutes until vegetables are tender.
  2. Stir in the cherry tomatoes and spinach, cooking until the spinach wilts.
Season and Serve
  1. Sprinkle oregano, salt, black pepper, and red pepper flakes over the mixture. Stir well to combine.
  2. Serve hot, optionally over rice or with pita bread.
