Ingredients
  

Cocktail Base
  • 1 cup lychee fruit fresh or canned, drained
  • 1/4 cup rose syrup adjust sweetness to taste
  • 1/2 cup fresh lime juice about 4 limes
  • 1/2 cup white rum optional for non-alcoholic version
  • 2 cups club soda to top off
Garnish
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 4 slices lime for garnish
  • 4 pieces lychee for garnish

Method
 

Prepare the Mojito
  1. In a cocktail shaker, muddle the fresh mint leaves and lime juice together to release the mint oils.
  2. Add the lychee fruit, rose syrup, and white rum (if using) to the shaker.
  3. Fill the shaker with ice and shake well for about 15 seconds.
  4. Strain the mixture into serving glasses filled with ice.
  5. Top off each glass with club soda and stir gently to combine.
  6. Garnish with additional mint leaves, lime slices, and a lychee on top.

Notes

For a non-alcoholic version, simply omit the white rum.
