Ingredients
  

Eggplant Preparation
  • 2 medium Eggplants Sliced into 1/2 inch rounds
  • 1 teaspoon Salt For sweating the eggplant
  • 1 tablespoon Olive Oil For brushing
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Black Pepper

Method
 

Prepare the Eggplant
  1. Slice the eggplants into 1/2 inch rounds and sprinkle with salt. Let them sit for 15 minutes to sweat.
  2. Rinse the eggplant slices under cold water and pat dry with paper towels.
Season and Cook
  1. In a mixing bowl, combine the eggplant slices with olive oil, garlic powder, paprika, and black pepper. Toss to coat evenly.
  2. Preheat the air fryer to 375°F (190°C). Place the seasoned eggplant slices in a single layer in the air fryer basket.
  3. Cook for 15-20 minutes, flipping halfway through, until the eggplant is golden and tender.
