Prepare the Eggplant
- Slice the eggplants into 1/2 inch rounds and sprinkle with salt. Let them sit for 15 minutes to sweat.
- Rinse the eggplant slices under cold water and pat dry with paper towels.
Season and Cook
- In a mixing bowl, combine the eggplant slices with olive oil, garlic powder, paprika, and black pepper. Toss to coat evenly.
- Preheat the air fryer to 375°F (190°C). Place the seasoned eggplant slices in a single layer in the air fryer basket.
- Cook for 15-20 minutes, flipping halfway through, until the eggplant is golden and tender.
