  • 2 medium Russet potatoes (about 300g each)
  • 8 oz sirloin steak (cut into bite-sized pieces)
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 2 tbsp chopped chives or green onions

Preparation Steps
  1. Preheat your oven to 425°F (220°C). Scrub the russet potatoes clean.
  2. Prick each potato several times with a fork, rub with olive oil, sprinkle with salt, and place directly on the oven rack. Bake for 45-60 minutes until tender.
  3. While potatoes bake, heat olive oil in a skillet over medium-high heat. Season steak bites with salt and pepper, then sear for about 5-7 minutes until cooked to your liking.
  4. When potatoes are done, slice open lengthwise and fluff the insides with a fork. Layer on cheddar cheese and steak bites.
  5. Top each potato with sour cream and sprinkle with chives or green onions before serving.
