Ingredients
  

Salad Base
  • 4 cups kale, chopped stems removed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1/4 cup Parmesan cheese, grated plus extra for serving
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chopped kale, cherry tomatoes, and cucumber.
  2. Using salad tongs, toss the ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, lemon juice, honey, Parmesan cheese, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to coat the ingredients evenly.
  2. Serve immediately, garnished with extra Parmesan cheese if desired.
