Ingredients
  

Chicken and Gnocchi
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 16 oz gnocchi store-bought or homemade
  • 2 tbsp olive oil for cooking
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Creamy Sauce
  • 3 cloves garlic minced
  • 1 cup chicken broth low-sodium
  • 1 cup heavy cream or half-and-half
  • 1 cup fresh spinach roughly chopped
  • 1/2 cup Parmesan cheese grated

Method
 

Cook Chicken
  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.
Prepare Sauce
  1. In the same pot, add minced garlic and sauté for 1 minute until fragrant. Pour in the chicken broth and bring to a simmer.
Combine Ingredients
  1. Stir in the heavy cream, lemon juice, and lemon zest. Add the gnocchi and cooked chicken back to the pot. Cook for an additional 5-7 minutes until the gnocchi are tender and the sauce has thickened.
Finish and Serve
  1. Stir in the fresh spinach and Parmesan cheese until the spinach wilts. Adjust seasoning if necessary. Serve warm.
