Lemon Blueberry Lasagna

Ingredients
  

Lemon Cream Layer
  • 1 cup cream cheese softened
  • 1 cup powdered sugar
  • 1/2 cup lemon juice freshly squeezed
  • 1 cup whipped cream or whipped topping
  • 1 tablespoon lemon zest
Blueberry Layer
  • 2 cups fresh blueberries
  • 1 tablespoon sugar optional
Graham Cracker Layer
  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted

Method
 

Prepare the Graham Cracker Base
  1. In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
  2. Press the mixture into the bottom of a 9x13 inch baking dish to form an even layer.
Make the Lemon Cream
  1. In a large bowl, beat the softened cream cheese and powdered sugar together until smooth.
  2. Add the lemon juice and lemon zest, mixing until fully incorporated.
  3. Fold in the whipped cream gently until the mixture is light and fluffy.
Layer the Ingredients
  1. Spread half of the lemon cream mixture over the graham cracker base.
  2. Sprinkle half of the blueberries on top of the lemon cream.
  3. Repeat the layers with the remaining lemon cream and blueberries.
Chill and Serve
  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  2. Cut into squares and serve chilled, garnished with extra blueberries if desired.

Notes
