Method
Prepare the Soup
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and ground beef (or sausage) to the pot. Cook until the meat is browned, about 7-10 minutes.
- Stir in crushed tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer.
- Add broken lasagna noodles to the pot and cook until tender, about 10-12 minutes.
Serve the Soup
- Ladle the soup into bowls and top each serving with a dollop of ricotta cheese, shredded mozzarella, and fresh basil.
