Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 pound ground beef or Italian sausage
  • 1 can crushed tomatoes 28 oz
  • 4 cups beef broth or chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 8 ounces lasagna noodles broken into pieces
  • 1 cup ricotta cheese for garnish
  • 1 cup shredded mozzarella cheese for garnish
  • 1/4 cup fresh basil chopped, for garnish

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and ground beef (or sausage) to the pot. Cook until the meat is browned, about 7-10 minutes.
  3. Stir in crushed tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer.
  4. Add broken lasagna noodles to the pot and cook until tender, about 10-12 minutes.
Serve the Soup
  1. Ladle the soup into bowls and top each serving with a dollop of ricotta cheese, shredded mozzarella, and fresh basil.

Notes
