Prepare the Filling
- In a mixing bowl, combine ricotta cheese, chopped spinach, half of the mozzarella cheese, Parmesan cheese, garlic powder, salt, and black pepper. Mix well.
- Set the filling aside.
Assemble the Roll Ups
- Preheat the oven to 375°F (190°C).
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Take a cooked lasagna noodle, spread about 2-3 tablespoons of the filling on it, and roll it up tightly. Place seam-side down in the baking dish.
- Repeat with remaining noodles and filling.
Bake the Lasagna Roll Ups
- Once all roll ups are in the dish, pour the remaining marinara sauce over the top and sprinkle with the remaining mozzarella cheese.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden.
Serve
- Let the roll ups cool for a few minutes before serving. Enjoy your delicious lasagna roll ups!
