Prepare Quinoa

- Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed. Remove from heat and let cool.
Make Lemon Dressing
- In a small bowl, whisk together lemon juice, olive oil, honey, salt, and black pepper until well combined.
Assemble Salad
- In a large bowl, combine chopped kale, cherry tomatoes, cucumber, red onion, and cooked quinoa.
- Drizzle the lemon dressing over the salad and toss gently to combine.
- Top with crumbled feta cheese if desired and serve immediately.
