Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups kale stems removed and chopped
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup feta cheese crumbled (optional)
Lemon Dressing
  • 1 lemon juice freshly squeezed
  • 2 tablespoons olive oil
  • 1 teaspoon honey or maple syrup for vegan option
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil over medium-high heat.
  2. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed. Remove from heat and let cool.
Make Lemon Dressing
  1. In a small bowl, whisk together lemon juice, olive oil, honey, salt, and black pepper until well combined.
Assemble Salad
  1. In a large bowl, combine chopped kale, cherry tomatoes, cucumber, red onion, and cooked quinoa.
  2. Drizzle the lemon dressing over the salad and toss gently to combine.
  3. Top with crumbled feta cheese if desired and serve immediately.

Notes
