Cooking Steps
- Set the Instant Pot to 'Sauté' mode. Add olive oil and let it heat up.
- Add the diced onion, green bell pepper, and garlic. Sauté for about 3 minutes until softened.
- Add the ground beef to the pot. Cook until browned, breaking it apart with a spatula, about 5 minutes.
- Stir in the sliced mushrooms, salt, pepper, and Italian seasoning. Cook for another 2 minutes.
- Add the rinsed rice and beef broth. Stir well to combine.
- Close the lid and set the Instant Pot to 'Manual' mode for 8 minutes on high pressure.
- Once the cooking time is complete, allow for a natural pressure release for 5 minutes, then quick release any remaining pressure.
- Open the lid and stir in the provolone cheese until melted and creamy.
