  • 1 lb ground beef 85% lean
  • 1 cup long-grain rice rinsed
  • 1 cup beef broth low sodium
  • 1 medium onion diced
  • 1 medium green bell pepper diced
  • 1 cup sliced mushrooms optional
  • 1 cup provolone cheese shredded
  • 2 cloves garlic minced
  • 1 tbsp olive oil for sautéing
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp Italian seasoning

Method
 

Cooking Steps
  1. Set the Instant Pot to 'Sauté' mode. Add olive oil and let it heat up.
  2. Add the diced onion, green bell pepper, and garlic. Sauté for about 3 minutes until softened.
  3. Add the ground beef to the pot. Cook until browned, breaking it apart with a spatula, about 5 minutes.
  4. Stir in the sliced mushrooms, salt, pepper, and Italian seasoning. Cook for another 2 minutes.
  5. Add the rinsed rice and beef broth. Stir well to combine.
  6. Close the lid and set the Instant Pot to 'Manual' mode for 8 minutes on high pressure.
  7. Once the cooking time is complete, allow for a natural pressure release for 5 minutes, then quick release any remaining pressure.
  8. Open the lid and stir in the provolone cheese until melted and creamy.
