Ingredients
  

  • 2 fillets salmon (6 oz each)
  • 1/4 cup honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon lime juice
  • 1 cup jasmine rice
  • 1 cup mixed vegetables
  • 2 green onions chopped

Method
 

  1. Cook jasmine rice according to package instructions.
  2. In a bowl, whisk together honey, sriracha, soy sauce, and lime juice.
  3. Marinate salmon in half of the sauce for 15 minutes.
  4. Preheat oven to 400°F (200°C). Bake marinated salmon on a lined baking sheet for 12-15 minutes until flaky.
  5. Stir-fry mixed vegetables in a skillet with oil until tender-crisp (about 5 minutes).
  6. Assemble bowls with rice as the base, topped with salmon, veggies, and remaining sauce. Garnish with green onions.

Notes
