Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts diced
  • 6 cups chicken broth low sodium recommended
  • 1 cup water
Vegetables
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onion diced
  • 2 cloves garlic minced
Noodles and Seasoning
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Chicken
  1. In a large pot, combine the chicken broth and water. Bring to a boil.
  2. Add the diced chicken and cook for about 10 minutes until the chicken is cooked through.
Add Vegetables
  1. Add the sliced carrots, celery, onion, and minced garlic to the pot.
  2. Reduce heat and let simmer for 10 minutes until vegetables are tender.
Cook Noodles
  1. Stir in the egg noodles, thyme, parsley, salt, and pepper.
  2. Cook for an additional 10 minutes until the noodles are tender.
Serve
  1. Taste and adjust seasoning if necessary. Serve hot.
