Ingredients
  

Chicken and Potatoes
  • 1 pound chicken breast boneless, skinless
  • 2 pounds potatoes Yukon Gold or Russet
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Creamy Garlic Sauce
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Method
 

Prepare the Ingredients
  1. Peel and dice the potatoes into bite-sized pieces.
  2. Season the chicken breasts with salt and pepper.
Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
Cook the Potatoes
  1. In a separate pot, boil the diced potatoes in salted water for about 15 minutes until tender.
  2. Drain and set aside.
Make the Creamy Garlic Sauce
  1. In the same skillet used for the chicken, add minced garlic and sauté for 1 minute until fragrant.
  2. Pour in the heavy cream, stirring to combine, then add the shredded cheddar cheese, thyme, and paprika. Stir until the cheese is melted and the sauce is smooth.
Combine and Serve
  1. Add the cooked potatoes to the skillet with the creamy garlic sauce and stir to coat.
  2. Slice the chicken and serve it on top of the creamy potatoes. Enjoy!
