- Set the Instant Pot to 'Sauté' mode. Add olive oil and sliced onions; cook until caramelized (about 10 minutes). Remove onions and set aside.
- Season the beef chuck roast with salt and pepper. Add to the pot; sear each side for about 4-5 minutes until browned.
- Stir in minced garlic, thyme, and bay leaves; cook for another minute.
- Pour in beef broth while scraping any browned bits from the pot. Return caramelized onions to the pot.
- Secure the lid and set to 'Manual' or 'Pressure Cook' for 60 minutes.
- Once cooking is complete, carefully release pressure. Serve slices of pot roast topped with sauce.
