  • 3 lbs beef chuck roast
  • 4 medium yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Set the Instant Pot to 'Sauté' mode. Add olive oil and sliced onions; cook until caramelized (about 10 minutes). Remove onions and set aside.
  2. Season the beef chuck roast with salt and pepper. Add to the pot; sear each side for about 4-5 minutes until browned.
  3. Stir in minced garlic, thyme, and bay leaves; cook for another minute.
  4. Pour in beef broth while scraping any browned bits from the pot. Return caramelized onions to the pot.
  5. Secure the lid and set to 'Manual' or 'Pressure Cook' for 60 minutes.
  6. Once cooking is complete, carefully release pressure. Serve slices of pot roast topped with sauce.
