- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Cream together the unsalted butter and granulated sugar until light and fluffy.
- Add eggs one at a time along with the vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually fold into the wet ingredients until just combined.
- Scoop tablespoon-sized portions of dough and roll into balls. Place on prepared baking sheets with space in between.
- Create an indentation in each cookie ball using your finger or the end of a spoon, then fill with jam.
- Bake for 12-15 minutes or until golden brown. Allow to cool slightly before transferring to a wire rack.
