  • 4 medium bell peppers (red, yellow, or green)
  • 1 lb lean ground turkey
  • 1 cup cooked brown rice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice the tops off the bell peppers and remove seeds; trim bottoms if necessary for stability.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant (about 3 minutes).
  4. Add ground turkey; cook until browned, breaking it up as it cooks.
  5. Stir in cooked rice and Italian seasoning; season with salt and pepper.
  6. Generously fill each pepper with the turkey mixture and place upright in the baking dish.
  7. Cover with foil; bake for 25-30 minutes until peppers are tender. Remove foil for the last five minutes to slightly brown tops.
