  • 3 breasts boneless, skinless chicken
Noodles
  • 8 oz whole wheat lo mein noodles
Vegetables
  • 1 cup bell peppers
  • 1 cup carrots
  • 1 cup snap peas
  • 3 cloves garlic minced
Sauces & Oils
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or agave syrup

Method
 

Preparation
  1. Slice chicken breasts into thin strips and chop vegetables into bite-sized pieces.
  2. Cook whole wheat lo mein noodles according to package instructions until al dente. Drain and rinse under cold water.
Cooking
  1. In a large skillet, heat sesame oil over medium heat. Add chicken strips, season with salt and pepper, and cook until golden brown (about 5-7 minutes).
  2. Add chopped vegetables and minced garlic to the skillet. Stir-fry for another 3-4 minutes until veggies are tender-crisp.
  3. In a small bowl, whisk together soy sauce and honey or agave syrup, then pour over the chicken and veggies.
  4. Add drained lo mein noodles to the skillet and toss everything together until well combined and heated through (around 2 minutes). Serve immediately.
