Ingredients
  

Dry Ingredients
  • 1 cup rolled oats preferably whole grain
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon ground
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 large egg beaten
  • 1/2 cup milk dairy or non-dairy
Add-ins
  • 1 cup diced apples peeled and cored
  • 1/2 cup walnuts chopped, optional

Method
 

Prepare the Muffin Tin
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
Mix Dry Ingredients
  1. In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
Mix Wet Ingredients
  1. In another bowl, whisk together applesauce, honey, beaten egg, and milk until well combined.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in diced apples and walnuts if using.
Fill Muffin Tin
  1. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake
  1. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
