- Marinate the chicken breasts in the soy sauce, pineapple juice, and minced garlic for at least 30 minutes.
- Grill the marinated chicken over medium heat until cooked through, about 6-7 minutes per side.
- While the chicken is grilling, prepare the slaw by mixing shredded cabbage, green onions, mayonnaise, and rice vinegar in a bowl.
- Toast the Hawaiian rolls on the grill or in a toaster oven.
- Assemble the sandwiches by placing the grilled chicken on the bottom half of each roll, topping with the pineapple slices and slaw, then covering with the top half of the roll.
- If desired, add a slice of cheese before closing the sandwich.
