  • 4 medium potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup chicken broth low sodium
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon paprika smoked or sweet
  • 1 teaspoon dried thyme

Method
 

Cook the Turkey
  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until softened, about 3-4 minutes.
  2. Add ground turkey to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
Add Potatoes and Seasoning
  1. Stir in diced potatoes, chicken broth, salt, pepper, paprika, and thyme. Bring to a simmer.
  2. Cover the skillet and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally.
Serve
  1. Once the potatoes are cooked, remove from heat. Taste and adjust seasoning if necessary.
  2. Serve hot, garnished with fresh herbs if desired.
