Cook the Turkey
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until softened, about 3-4 minutes.
- Add ground turkey to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
Add Potatoes and Seasoning
- Stir in diced potatoes, chicken broth, salt, pepper, paprika, and thyme. Bring to a simmer.
- Cover the skillet and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally.
Serve
- Once the potatoes are cooked, remove from heat. Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh herbs if desired.
