Grilled Shrimp
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Corn Salsa
  • 1 cup corn fresh or frozen
  • 1 medium red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/2 teaspoon salt
Creamy Sauce
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon honey
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
Bowl Assembly
  • 2 cups cooked rice white or brown
  • 1 large avocado sliced
  • 1/4 cup lime wedges for serving

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine shrimp, olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss to coat.
  2. Preheat the grill to medium-high heat.
Grill the Shrimp
  1. Place the shrimp on the grill and cook for 2-3 minutes on each side until pink and opaque.
Make the Corn Salsa
  1. In a bowl, mix corn, red bell pepper, red onion, cilantro, lime juice, and salt. Stir well and set aside.
Prepare the Creamy Sauce
  1. In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, honey, garlic powder, and salt until smooth.
Assemble the Bowls
  1. In each bowl, layer cooked rice, grilled shrimp, corn salsa, and sliced avocado.
  2. Drizzle with creamy sauce and serve with lime wedges.
