Ingredients
  

  • 1 lb ground turkey
  • 2 cups cooked long-grain rice white or brown
  • 1/4 cup fresh parsley chopped
  • 1 medium red onion diced
  • 3 cloves garlic minced
  • 1/2 cup feta cheese crumbled
  • 2 tsp dried oregano
  • 1 whole lemon juiced
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil

Method
 

  1. Cook rice according to package instructions.
  2. In a large skillet over medium-high heat, add olive oil and sauté diced red onion until soft, about 5 minutes. Add minced garlic and sauté for an additional minute.
  3. Stir in ground turkey, breaking it apart with a wooden spoon. Cook until fully browned, 6-8 minutes.
  4. Season with oregano, salt, pepper, and lemon juice; mix well.
  5. In serving bowls, layer cooked rice topped with the turkey mixture. Finish with crumbled feta and chopped parsley.
  6. Serve immediately with extra lemon wedges if desired.
