Greek Chicken Quinoa Bowl

Ingredients
  

Chicken Marinade
  • 1 lb chicken breast boneless, skinless
  • 2 tbsp olive oil extra virgin
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp oregano dried
  • 1 tsp salt
  • 1/2 tsp black pepper
Quinoa Base
  • 1 cup quinoa rinsed
  • 2 cups water or chicken broth
  • 1/2 tsp salt
Toppings
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup kalamata olives pitted and sliced
  • 1/4 cup parsley chopped

Method
 

Marinate the Chicken
  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes.
Cook the Quinoa
  1. In a pot, bring water (or broth) to a boil. Add quinoa and salt. Reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Grill chicken for 6-7 minutes on each side or until fully cooked. Let rest for 5 minutes before slicing.
Assemble the Bowl
  1. In a bowl, layer quinoa, sliced chicken, cucumber, cherry tomatoes, red onion, feta, olives, and parsley. Drizzle with olive oil and lemon juice if desired.
