Method
Marinate the Chicken
- In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes.
Cook the Quinoa
- In a pot, bring water (or broth) to a boil. Add quinoa and salt. Reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork.
Grill the Chicken
- Preheat the grill to medium-high heat. Grill chicken for 6-7 minutes on each side or until fully cooked. Let rest for 5 minutes before slicing.
Assemble the Bowl
- In a bowl, layer quinoa, sliced chicken, cucumber, cherry tomatoes, red onion, feta, olives, and parsley. Drizzle with olive oil and lemon juice if desired.
