Prepare the Meatballs
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine ground chicken, breadcrumbs, feta cheese, egg, garlic, parsley, oregano, salt, and pepper.
- Mix until well combined and form into meatballs, about 1 inch in diameter.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
Cook the Orzo
- In a pot, bring chicken broth to a boil.
- Add orzo and cook according to package instructions until al dente.
- Drain the orzo and return to the pot.
- Stir in lemon zest, lemon juice, olive oil, dill, salt, and pepper.
Serve
- Serve the meatballs over a bed of lemon orzo.
- Garnish with additional dill and lemon wedges if desired.
