Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs preferably whole wheat
  • 1/4 cup feta cheese crumbled
  • 1 large egg
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh oregano chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
Lemon Orzo
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 lemon zest
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp olive oil
  • 1 tbsp fresh dill chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, breadcrumbs, feta cheese, egg, garlic, parsley, oregano, salt, and pepper.
  3. Mix until well combined and form into meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
Cook the Orzo
  1. In a pot, bring chicken broth to a boil.
  2. Add orzo and cook according to package instructions until al dente.
  3. Drain the orzo and return to the pot.
  4. Stir in lemon zest, lemon juice, olive oil, dill, salt, and pepper.
Serve
  1. Serve the meatballs over a bed of lemon orzo.
  2. Garnish with additional dill and lemon wedges if desired.

Notes
