Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 cucumber grated squeeze out excess water
  • 2 cloves garlic minced
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
Gyro Assembly
  • 1 cup shredded lettuce
  • 1 tomato sliced
  • 1/2 red onion thinly sliced

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken thighs and coat well. Marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat.
Cook the Chicken
  1. Grill the marinated chicken thighs for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).
  2. Remove from grill and let rest for a few minutes before slicing.
Prepare Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt until well combined. Refrigerate until ready to serve.
Assemble Gyros
  1. Slice the grilled chicken and place it on pita bread. Top with shredded lettuce, sliced tomato, and red onion.
  2. Drizzle tzatziki sauce over the top and wrap the pita around the filling. Serve immediately.

Notes
