Marinate the Chicken
- In a mixing bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken thighs and coat well. Marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
Cook the Chicken
- Grill the marinated chicken thighs for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).
- Remove from grill and let rest for a few minutes before slicing.
Prepare Tzatziki Sauce
- In a bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt until well combined. Refrigerate until ready to serve.
Assemble Gyros
- Slice the grilled chicken and place it on pita bread. Top with shredded lettuce, sliced tomato, and red onion.
- Drizzle tzatziki sauce over the top and wrap the pita around the filling. Serve immediately.
