Ingredients
  

Chicken and Vegetables
  • 1 lb boneless chicken breasts cut into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1 cup zucchini sliced
  • 1 cup red onion diced
  • 2 cloves garlic minced
Seasoning and Toppings
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 cup feta cheese crumbled
  • 1 tbsp olive oil
Pasta
  • 2 cups penne pasta uncooked

Method
 

Prepare the Pasta
  1. Preheat the oven to 375°F (190°C). Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and onion, sautéing until fragrant.
Cook the Chicken and Vegetables
  1. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
  2. Stir in the cherry tomatoes, zucchini, oregano, thyme, salt, and pepper. Cook for an additional 5 minutes until vegetables are tender.
Combine and Bake
  1. In a large mixing bowl, combine the cooked pasta with the chicken and vegetable mixture. Mix well.
  2. Transfer the mixture to a casserole dish and sprinkle crumbled feta cheese on top.
  3. Bake in the preheated oven for 25-30 minutes until heated through and the cheese is slightly golden.
Serve
