Prepare the Pasta
- Preheat the oven to 375°F (190°C). Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and onion, sautéing until fragrant.
Cook the Chicken and Vegetables
- Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Stir in the cherry tomatoes, zucchini, oregano, thyme, salt, and pepper. Cook for an additional 5 minutes until vegetables are tender.
Combine and Bake
- In a large mixing bowl, combine the cooked pasta with the chicken and vegetable mixture. Mix well.
- Transfer the mixture to a casserole dish and sprinkle crumbled feta cheese on top.
- Bake in the preheated oven for 25-30 minutes until heated through and the cheese is slightly golden.
