Prepare the Chicken
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, oregano, salt, and pepper. Cook for another minute until fragrant.
- Add the diced chicken and cook until no longer pink, about 5-7 minutes.
Combine Ingredients
- Stir in the white beans, green chilies, chicken broth, and corn. Bring the mixture to a boil.
- Reduce heat and let it simmer for 20 minutes, stirring occasionally.
- Stir in the heavy cream and let it heat through for another 5 minutes.
Serve
- Ladle the chili into bowls and top with shredded Monterey Jack cheese and chopped cilantro.
- Serve hot and enjoy your ghostly white chicken chili!
