Prepare the Ingredients
- In a large bowl, combine the chicken breasts, halved baby potatoes, minced garlic, olive oil, oregano, thyme, salt, and pepper. Toss until everything is well coated.
- Transfer the mixture into the crockpot and pour the chicken broth over the top.
Cook the Dish
- Cover the crockpot and cook on low for 6 hours or until the chicken is cooked through and the potatoes are tender.
Add Cheese and Serve
- In the last 30 minutes of cooking, sprinkle the grated Parmesan cheese over the chicken and potatoes. Cover and continue to cook until the cheese is melted.
- Serve warm, garnished with additional Parmesan if desired.
