Ingredients
  

Chicken and Vegetables
  • 4 pieces boneless, skinless chicken breasts
  • 1 pound baby potatoes halved
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 cup grated Parmesan cheese

Method
 

Prepare the Ingredients
  1. In a large bowl, combine the chicken breasts, halved baby potatoes, minced garlic, olive oil, oregano, thyme, salt, and pepper. Toss until everything is well coated.
  2. Transfer the mixture into the crockpot and pour the chicken broth over the top.
Cook the Dish
  1. Cover the crockpot and cook on low for 6 hours or until the chicken is cooked through and the potatoes are tender.
Add Cheese and Serve
  1. In the last 30 minutes of cooking, sprinkle the grated Parmesan cheese over the chicken and potatoes. Cover and continue to cook until the cheese is melted.
  2. Serve warm, garnished with additional Parmesan if desired.
