Method
Prepare the Roast
- Preheat the oven to 300°F (150°C).
- Season the chuck roast with salt and pepper on all sides.
- In a Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
Caramelize the Onions
- Remove the roast and set aside. In the same pot, add butter and sliced onions.
- Cook the onions over medium heat, stirring occasionally, until they are caramelized, about 15-20 minutes.
Combine and Cook
- Add thyme, beef broth, French onion soup, and water to the caramelized onions. Stir to combine.
- Return the roast to the pot, cover, and place in the preheated oven.
- Cook for 3 hours, or until the meat is tender and reaches an internal temperature of 190°F (88°C).
Serve
- Remove the pot from the oven and let the roast rest for 10-15 minutes before slicing.
- Serve the sliced roast with the onion mixture spooned over the top.
