French Onion Pot Roast

Ingredients
  

Beef and Seasoning
  • 3 pounds chuck roast trimmed and tied
  • 2 teaspoons salt divided
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for searing
Onion Mixture
  • 4 large yellow onions sliced
  • 2 tablespoons butter for caramelizing
  • 1 teaspoon thyme dried or fresh
  • 1 cup beef broth low sodium
Soup Base
  • 1 can French onion soup 10.5 oz
  • 1 cup water

Method
 

Prepare the Roast
  1. Preheat the oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper on all sides.
  3. In a Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
Caramelize the Onions
  1. Remove the roast and set aside. In the same pot, add butter and sliced onions.
  2. Cook the onions over medium heat, stirring occasionally, until they are caramelized, about 15-20 minutes.
Combine and Cook
  1. Add thyme, beef broth, French onion soup, and water to the caramelized onions. Stir to combine.
  2. Return the roast to the pot, cover, and place in the preheated oven.
  3. Cook for 3 hours, or until the meat is tender and reaches an internal temperature of 190°F (88°C).
Serve
  1. Remove the pot from the oven and let the roast rest for 10-15 minutes before slicing.
  2. Serve the sliced roast with the onion mixture spooned over the top.

Notes
