French Onion Pasta

Ingredients
  

Pasta
  • 12 oz fettuccine or any pasta of choice
Onions
  • 3 medium yellow onions sliced
Butter
  • 4 tbsp unsalted butter
Garlic
  • 3 cloves garlic minced
Beef Broth
  • 2 cups beef broth low sodium
Thyme
  • 1 tsp dried thyme
Cheese
  • 1 cup gruyere cheese shredded
Salt and Pepper
  • to taste salt
  • to taste black pepper

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
Caramelize the Onions
  1. In a skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20 minutes until they are caramelized and golden brown.
Add Garlic and Broth
  1. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant. Pour in the beef broth and add the dried thyme. Bring to a simmer.
Combine Pasta and Sauce
  1. Add the cooked pasta to the skillet and toss to combine. Cook for another 2-3 minutes until heated through. Season with salt and pepper to taste.
Serve
  1. Serve the pasta in bowls, topped with shredded gruyere cheese. Optionally, broil briefly to melt the cheese.

Notes

For a vegetarian version, substitute beef broth with vegetable broth.
