Ingredients
  

Meatloaf Base
  • 1 lb ground beef 80/20 blend for best flavor
  • 1 cup bread crumbs preferably plain
  • 1 large egg beaten
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Caramelized Onions
  • 2 large yellow onions thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar to enhance caramelization
  • 1 tbsp balsamic vinegar for added depth
Topping
  • 1 cup French onion soup canned or homemade
  • 1 cup grated Gruyère cheese or Swiss cheese

Method
 

Prepare Caramelized Onions
  1. In a skillet, heat butter and olive oil over medium heat. Add sliced onions and sugar, stirring frequently.
  2. Cook for 15-20 minutes until onions are soft and golden brown. Stir in balsamic vinegar and cook for an additional 2 minutes.
Mix Meatloaf Ingredients
  1. In a mixing bowl, combine ground beef, bread crumbs, egg, garlic powder, salt, and pepper.
  2. Fold in half of the caramelized onions, reserving the rest for topping.
Shape and Bake Meatloaf
  1. Preheat the oven to 350°F (175°C).
  2. Transfer the meat mixture into a loaf pan, shaping it into a loaf.
  3. Bake in the preheated oven for 45 minutes.
Add Topping
  1. Remove the meatloaf from the oven and spread the French onion soup over the top.
  2. Sprinkle the remaining caramelized onions and Gruyère cheese on top.
  3. Return to the oven and bake for an additional 15 minutes, until the cheese is melted and bubbly.
Serve
  1. Let the meatloaf rest for 10 minutes before slicing. Serve warm.
