Vegetables
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 1 medium zucchini sliced
  • 1 medium yellow squash sliced
  • 2 tablespoons olive oil for sautéing
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon fresh lemon juice for flavor
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Prepare the Vegetables
  1. Wash and trim the asparagus, then cut it into 2-inch pieces. Slice the zucchini and yellow squash.
  2. Mince the garlic and set aside.
Sauté the Vegetables
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the asparagus, zucchini, and yellow squash to the skillet. Season with salt and pepper.
  4. Sauté the vegetables for about 8-10 minutes, stirring occasionally, until they are tender but still crisp.
  5. Remove from heat and stir in the lemon juice.
  6. Garnish with fresh parsley before serving.
