Ingredients
  

For the Stuffed Peppers
  • 4 pieces Bell Peppers Any color, tops cut off and seeds removed
  • 1 pound Ground Beef Can substitute with turkey or plant-based meat
  • 1 cup Cooked Rice White or brown rice
  • 1 cup Black Beans Canned, drained and rinsed
  • 1 cup Corn Canned or frozen
  • 1 packet Taco Seasoning Store-bought or homemade
  • 1 cup Shredded Cheese Cheddar or Mexican blend
  • 1 cup Salsa Your choice of mild or spicy
For Topping
  • 1 cup Sour Cream Optional
  • 1 cup Chopped Cilantro Optional

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Make the Filling
  1. Add cooked rice, black beans, corn, taco seasoning, and salsa to the skillet. Stir until well combined and heated through.
Stuff the Peppers
  1. Spoon the filling into each bell pepper until packed tightly.
  2. Place the stuffed peppers upright in a baking dish and sprinkle cheese on top.
Bake
  1. Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes until cheese is melted and bubbly.
Serve
  1. Remove from oven, let cool slightly, and serve with sour cream and cilantro if desired.
