Method
Prepare the Peppers
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Make the Filling
- Add cooked rice, black beans, corn, taco seasoning, and salsa to the skillet. Stir until well combined and heated through.
Stuff the Peppers
- Spoon the filling into each bell pepper until packed tightly.
- Place the stuffed peppers upright in a baking dish and sprinkle cheese on top.
Bake
- Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes until cheese is melted and bubbly.
Serve
- Remove from oven, let cool slightly, and serve with sour cream and cilantro if desired.
