Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 pound ground beef or Italian sausage
  • 4 cups chicken broth or vegetable broth
  • 1 can crushed tomatoes 28 oz
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Pasta and Cream
  • 8 oz lasagna noodles broken into pieces
  • 1 cup heavy cream for creaminess
  • 1 cup shredded mozzarella cheese for topping
  • 1/2 cup grated Parmesan cheese for flavor
Garnish
  • 1/4 cup fresh basil chopped, for garnish

Method
 

Prepare the Soup Base
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add ground beef (or sausage) and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  4. Pour in chicken broth and crushed tomatoes, then stir in Italian seasoning, salt, and pepper.
Cook the Pasta
  1. Bring the soup to a boil, then add the broken lasagna noodles. Reduce heat and simmer for about 10-12 minutes until noodles are tender.
Add Cream and Cheese
  1. Stir in the heavy cream and let it simmer for an additional 5 minutes.
  2. Remove from heat and stir in mozzarella and Parmesan cheese until melted and creamy.
Serve
  1. Ladle the soup into bowls and garnish with fresh basil before serving.
