Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 pound ground beef or Italian sausage
  • 4 cups chicken broth or vegetable broth
  • 1 can crushed tomatoes 14.5 oz
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Pasta and Cream
  • 8 ounces lasagna noodles broken into pieces
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese for topping
  • 1/2 cup grated Parmesan cheese for topping
  • 1/4 cup fresh basil chopped, for garnish

Method
 

Prepare the Soup Base
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and ground beef (or sausage) to the pot. Cook until the meat is browned, about 7-10 minutes.
  3. Stir in chicken broth, crushed tomatoes, Italian seasoning, salt, and pepper. Bring to a simmer.
Add Pasta and Cream
  1. Once the soup is simmering, add the broken lasagna noodles and cook for about 10 minutes, or until the noodles are tender.
  2. Stir in the heavy cream and let it heat through for another 5 minutes.
Serve
  1. Ladle the soup into bowls and top with shredded mozzarella, grated Parmesan, and fresh basil.
  2. Serve hot and enjoy your creamy lasagna soup!
