Method
Cook the Pasta
- In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
- Drain the pasta and set aside, reserving a cup of pasta water.
Prepare the Chicken
- In a skillet, heat olive oil over medium heat. Season chicken strips with Cajun seasoning, salt, and pepper.
- Cook the chicken for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
Make the Sauce
- In the same skillet, melt butter and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Add mozzarella cheese and stir until melted and smooth. If the sauce is too thick, add reserved pasta water to reach desired consistency.
Combine and Serve
- Add the cooked spaghetti and chicken to the sauce, tossing to coat evenly.
- Serve hot, garnished with chopped parsley.
