Ingredients
  

Pasta and Chicken
  • 12 oz spaghetti or any pasta of choice
  • 1 lb chicken breast sliced into strips
  • 2 tbsp Cajun seasoning adjust to taste
  • 2 tbsp olive oil
Garlic Mozzarella Sauce
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup mozzarella cheese shredded
  • 1 cup chicken broth
  • 1 tbsp butter
  • 1 tbsp parsley chopped, for garnish
  • 1 salt to taste
  • 1 pepper to taste

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
  2. Drain the pasta and set aside, reserving a cup of pasta water.
Prepare the Chicken
  1. In a skillet, heat olive oil over medium heat. Season chicken strips with Cajun seasoning, salt, and pepper.
  2. Cook the chicken for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
Make the Sauce
  1. In the same skillet, melt butter and add minced garlic. Sauté for 1-2 minutes until fragrant.
  2. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  3. Add mozzarella cheese and stir until melted and smooth. If the sauce is too thick, add reserved pasta water to reach desired consistency.
Combine and Serve
  1. Add the cooked spaghetti and chicken to the sauce, tossing to coat evenly.
  2. Serve hot, garnished with chopped parsley.

Notes
