  • 2 medium ripe mangoes diced
  • 1 cup cherry tomatoes halved
  • ½ small red onion finely chopped
  • 1 lime Juice of
  • 2 tbsp extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Wash and chop the avocados and mangoes into cubes.
  2. Halve the cherry tomatoes and finely chop the red onion.

  5. Toss gently to combine without mashing the ingredients.
