Ingredients
  

Chicken and Rice
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups chicken broth or water
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 medium cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt

Method
 

Prepare the Chicken and Rice
  1. Preheat the oven to 375°F (190°C).
  2. In a 9x13 inch baking dish, combine the chicken, rice, chicken broth, oregano, garlic powder, salt, and pepper.
  3. Stir well to combine all ingredients evenly.
Bake the Dish
  1. Cover the baking dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the rice is tender.
Make the Tzatziki Sauce
  1. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt.
  2. Mix well until all ingredients are thoroughly combined.
Serve
  1. Once the chicken and rice are done, remove from the oven and let it cool for a few minutes.
  2. Serve the chicken and rice topped with tzatziki sauce.

Notes
