Method
Prepare the Chicken and Rice
- Preheat the oven to 375°F (190°C).
- In a 9x13 inch baking dish, combine the chicken, rice, chicken broth, oregano, garlic powder, salt, and pepper.
- Stir well to combine all ingredients evenly.
Bake the Dish
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the rice is tender.
Make the Tzatziki Sauce
- In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt.
- Mix well until all ingredients are thoroughly combined.
Serve
- Once the chicken and rice are done, remove from the oven and let it cool for a few minutes.
- Serve the chicken and rice topped with tzatziki sauce.
