Ingredients
  

  • 1 lb fresh salmon fillet
  • 1 cup breadcrumbs plain or seasoned
  • 1 large egg
  • 2 tbsp fresh dill or parsley, chopped
  • 2 tbsp fresh lemon juice
  • 1 ripe avocado
  • ½ cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tbsp fresh lime juice
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Chop the salmon into small pieces and place it in a large bowl. Add breadcrumbs, egg, herbs, lemon juice, salt, and pepper. Mix until combined.
  3. Form the mixture into balls about the size of meatballs and arrange them on the baking sheet.
  4. Bake for 15-20 minutes until golden brown and cooked through.
  5. While baking, blend avocado, Greek yogurt, garlic, lime juice, salt, and pepper in a food processor until smooth.
  6. Serve warm salmon balls drizzled with avocado sauce.
