  • 4 fillets salmon 6 oz each
  • 1 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 3 cloves garlic minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley chopped
  • salt to taste
  • pepper to taste

Method
 

  1. Chop garlic and sun-dried tomatoes.
  2. Pat dry and season salmon fillets with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat until shimmering.
  4. Place salmon skin-side down in the skillet; cook for 6 minutes without moving. Flip and cook for an additional 3 minutes until cooked through.
  5. Remove salmon; add garlic to the skillet and sauté until fragrant. Stir in sun-dried tomatoes and heavy cream, simmering for about 3 minutes.
  6. Return the salmon to the skillet, spoon sauce over it, and simmer for another minute before serving.
