Preparation Steps
  1. Preheat your oven to 425°F (220°C) and wash the baby potatoes.
  2. Boil the cleaned potatoes in a large pot of water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
  3. Smash each potato gently on a parchment-lined baking sheet until about half an inch thick.
  4. Drizzle with olive oil, sprinkle with garlic powder, salt, and pepper. Roast for 25-30 minutes until golden brown.
  5. Remove from the oven, add cheddar cheese and bacon bits while hot, then return to the oven briefly to melt the cheese.
  6. Top with sour cream and garnish with chives before serving.
