  • 1 lb ground beef
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 1 cup cranberry sauce
  • 1/4 cup brown sugar
  • 2 tbsp low-sodium soy sauce
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  4. Bake for 20-25 minutes until browned and cooked through.
  5. In a saucepan over medium heat, combine cranberry sauce, brown sugar, and soy sauce until bubbly.
  6. Toss baked meatballs in the sauce until fully coated. Serve warm.
