Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 medium bell pepper, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup ketchup
  • 2 tbsp Worcestershire sauce
  • ½ cup low-sodium chicken broth
  • 4 buns hamburger or hoagie

Method
 

  1. Heat olive oil in a large skillet over medium heat. Cook the chicken breasts seasoned with half of the Cajun seasoning for about 5-7 minutes per side until golden brown. Remove from heat and shred.
  2. In the same skillet, sauté chopped onions and bell peppers for 3-4 minutes until soft. Add minced garlic and cook for another minute.
  3. Return shredded chicken to the skillet. Stir in ketchup, Worcestershire sauce, chicken broth, and remaining Cajun seasoning. Mix well.
  4. Lower heat and simmer for about 10 minutes to meld flavors.
  5. Serve on toasted buns with desired toppings.
