Method
- Preheat the oven to 400°F (200°C).
- Wash and dry the russet potatoes, then pierce each potato several times with a fork.
- Bake the potatoes directly on the oven rack for 45-60 minutes until tender. Allow them to cool slightly.
- Cut each potato in half lengthwise and scoop out most of the flesh, leaving about a quarter-inch layer.
- Brush both sides of each potato half with olive oil and sprinkle with salt. Place skin-side down on a baking sheet.
- Fill each potato skin with cheddar cheese and bacon bits.
- Return to the oven for another 15-20 minutes until cheese is melted and bubbly.
- Serve hot topped with sour cream and chives.
