Ingredients
  

  • 4 medium russet potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp chopped fresh chives
  • 2 tbsp olive oil for brushing
  • Salt to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the russet potatoes, then pierce each potato several times with a fork.
  3. Bake the potatoes directly on the oven rack for 45-60 minutes until tender. Allow them to cool slightly.
  4. Cut each potato in half lengthwise and scoop out most of the flesh, leaving about a quarter-inch layer.
  5. Brush both sides of each potato half with olive oil and sprinkle with salt. Place skin-side down on a baking sheet.
  6. Fill each potato skin with cheddar cheese and bacon bits.
  7. Return to the oven for another 15-20 minutes until cheese is melted and bubbly.
  8. Serve hot topped with sour cream and chives.
