Ingredients
  

Vegetables
  • 2 cups cucumber diced
  • 1 cup sweet bell pepper diced (any color)
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • 1 teaspoon dried oregano

Method
 

Prepare the Vegetables
  1. Wash and dice the cucumbers and sweet bell peppers. Halve the cherry tomatoes and finely chop the red onion.
  2. Place all the prepared vegetables in a mixing bowl.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, black pepper, and dried oregano.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss gently to combine.
  2. Transfer the salad to a serving dish and enjoy immediately or chill for 30 minutes before serving.
