Prepare the Ingredients
- Trim excess fat from the chuck roast and season it with salt, pepper, garlic powder, thyme, and rosemary.
- Peel and cut the carrots, potatoes, and onion into chunks.
Assemble in Crockpot
- Place the vegetables at the bottom of the crockpot.
- Place the seasoned roast on top of the vegetables.
- Pour the beef broth and red wine (if using) over the roast.
Cook the Roast
- Cover the crockpot and cook on low for 8 hours or until the meat is tender.
Serve
- Remove the roast and vegetables from the crockpot and let the roast rest for a few minutes before slicing.
- Serve with the cooking liquid as gravy.
