Ingredients
  

Patties
  • 2 medium sweet potatoes peeled and cubed
  • 1 cup red lentils rinsed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt to taste
  • 1 cup bread crumbs for coating
  • 2 tablespoons olive oil for frying

Method
 

Prepare the Lentils
  1. In a pot, bring 3 cups of water to a boil. Add the rinsed red lentils and cook for about 15 minutes until soft.
  2. Drain any excess water and set aside to cool.
Cook the Sweet Potatoes
  1. In a separate pot, boil the cubed sweet potatoes for about 10 minutes until tender. Drain and mash them in a large mixing bowl.
Mix Ingredients
  1. Add the cooked lentils, chopped onion, minced garlic, cumin, coriander, and salt to the mashed sweet potatoes. Mix until well combined.
Form Patties
  1. Shape the mixture into patties, about 2 inches in diameter. Coat each patty in bread crumbs.
Cook Patties
  1. Heat olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
  2. Transfer cooked patties to a baking sheet and keep warm in the oven if necessary.
Serve
  1. Serve the patties warm with your favorite dipping sauce or on a bed of salad.
