Method
Prepare the Lentils
- In a pot, bring 3 cups of water to a boil. Add the rinsed red lentils and cook for about 15 minutes until soft.
- Drain any excess water and set aside to cool.
Cook the Sweet Potatoes
- In a separate pot, boil the cubed sweet potatoes for about 10 minutes until tender. Drain and mash them in a large mixing bowl.
Mix Ingredients
- Add the cooked lentils, chopped onion, minced garlic, cumin, coriander, and salt to the mashed sweet potatoes. Mix until well combined.
Form Patties
- Shape the mixture into patties, about 2 inches in diameter. Coat each patty in bread crumbs.
Cook Patties
- Heat olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
- Transfer cooked patties to a baking sheet and keep warm in the oven if necessary.
Serve
- Serve the patties warm with your favorite dipping sauce or on a bed of salad.
