Ingredients
  

  • 1 cup fine bulgur wheat
  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 large egg
  • ¼ cup fresh parsley, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup plain breadcrumbs

Method
 

  1. Cook the bulgur according to package instructions using 2 cups of water. Once tender (about 12-15 minutes), set aside to cool.
  2. Sauté the chopped onion in olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. In a mixing bowl, combine cooked bulgur, sautéed onions and garlic, ground beef, egg, parsley, spices, and breadcrumbs. Mix until well combined.
  4. Preheat the oven to 400°F (200°C). Form the mixture into golf ball-sized meatballs and place them on a greased baking sheet.
  5. Bake for 20-25 minutes until browned and cooked through.
  6. Serve warm with marinara sauce or yogurt dip.
