Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream for creaminess
  • 1 cup lasagna noodles broken into pieces
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Cheese Mixture
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese plus more for topping
  • 1/2 cup grated Parmesan cheese
Garnish
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Soup Base
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.
  4. Pour in the chicken broth and bring to a boil. Add the broken lasagna noodles, Italian seasoning, salt, and pepper.
  5. Reduce heat and let simmer for 15 minutes, or until the noodles are tender.
Add Cream and Cheese
  1. Stir in the heavy cream and bring the mixture back to a gentle simmer.
  2. In a bowl, combine ricotta, mozzarella, and Parmesan cheese. Stir this cheese mixture into the soup until melted and creamy.
Serve
  1. Ladle the soup into bowls and top with additional mozzarella cheese, fresh basil, and parsley.
